Welcome, and I will try to answer, but maybe others will provide help as well...
First... I am not sure which model you are refering to, I do not see it in the catalog?
1. Diehedral...Build the wing flat on plans. Do not glue LE, TE or any stringers at diehedral joint. When you are ready to glue joint, make sure there is a good angle fit at LE. Secure center section down on plans and have wingtips elevated to proper height. Then glue LE, TE and any spars... Let dry.
2. Mylar Film is fine for larger models. I once cover a 402 Guillows P-51 with aluminum monokote. For these small models I would say it is not easy and may warp light parts, such as tails and wingtips, but it can be done. I would suggest painting the model, others here can help with getting that aluminum look. Now I use aluminum colored lite paper from EasyBuilt, so you have a few choices here.
3. I do not know about source for props. You can carve one from wood or trim down the plastic one.
