Guillows C170 RET control throw question

Greetings from a first poster but longtime flyer. Just finished this plane, not my first balsa but my first Guillows in decades. I've got plenty of arf's but I'm moving on from them. Here's where I'm at:
4.1 oz. AUW with 250 mah battery, Suppo 1504 brushless, 3.5g servos, 6a esc.
CG at 7/8" from LE which i believe is approximately 26% of MAC.
I'm looking for some rudder and elevator throw starting points.

Thanks to all that have gone before me and the info they've shared going back many years, it helped.
